it's like our tradition in the house here, we have pancakes for breakfast on saturday morning (and when i say breakfast, i mean breakfast and 9am, and not brunch) but it's been a few weekends since we haven't had any, and we got so excited about this week's pancakes...

it's red velvet!


and the amazing thing about theses pancakes were that they actually tasted like red velvet cake, with 'cream cheese' and all, and they're unbelievably healthy; wholegrain, dairy- and sugar-free. it's such a good excuse to have cake for breakfast!


red velvet (beetroot) pancakes
recipe for 2

1 egg
1 beetroot, cooked
6-8 dates (depend one how gooey and sweet your dates are)
3/4 cup milk of choice
1 1/2 tbsp raw cacao powder (may need more if you're using normal cocoa powder)
vanilla
(blend everything together until smooth)

3/4 cup flour (i used wholemeal, buckwheat and oat bran, almond flour would work as well)
1/2 tsp baking soda
(add this to wet mixture and cook on a nonstick pan)

vegan 'cream cheese' frosting

3-4 florets of cauliflower (~1/2 cup), cooked
4 dates
2-3 tbsp coconut milk
a squeeze of lemon
vanilla
(blend everything together till smooth, leave in the fridge, preferably overnight)

enjoy your veggie-loaded cake for breakfast!
